What is a Grease Trap & How it Works
Also known as a grease interceptor, the grease trap is made of metal or concrete and is either installed under a restaurant kitchen sink or buried outside. It differs in size based on what its needed capacities are.
A grease trap's job is to capture materials such as fats, oils, and grease as they come down the kitchen drain. It does this by slowing down the water flow, making the grease float to the top, with solids at the bottom, and allowing the water to flow through.
